Add support for PHP 8.5

Add support for PHP 8.5 - Update GitHub Actions workflow to include PHP 8.5 in the build matrix and tag it as latest. - Update `build.sh` and `clean.sh` to include PHP 8.5. - Fix typo in `build.sh` for PHP 8.4 build command. - Update `README.md` to list PHP 8.5 as supported. - Update `8.x/debian/Dockerfile` default PHP version to 8.5.
